High Key Images Help

Hey, Im doing a final project in my photography class, I chose to do High Key images, but i need some help with how to take them. First thing I need to know is whether or not I need to light the white background seperately from the subject. My second question is how I ougt to meter? Should i meter off an 18% gray card or should i meter the subject and open up two stops? I need any and all help you can give me about this. It would be much appreciated. Thanks in advance.
